During a college class they learned that mushrooms could grown entirely on spent coffee grounds. After watching hours of how-to videos and turning their frat kitchen into a science experiment they eventually decided to give up their corporate job offers to become full-time mushroom farmers.
What started as curiosity about urban farming has turned into a passion to Undo Food™ and reconnect families back to where it comes from through fun and delicious ready to grow and ready to eat products.
That passion to Undo Food is what took them from organic mushroom kits to stoneground breakfast cereal. Sometimes, we want to grow food ourselves, taste the absolute freshness, and show kids how mushrooms or herbs grow. And at the other times, we're busy, running out the door, and we just want to eat something - like breakfast cereal - that's already been cooked for us. But Back to the Roots believes the underlying trust, transparency, and consciousness shouldn't change from the produce aisle to the grocery aisle, or from ready to grow to ready to eat. They believe in a future where all food comes from the kitchen, not a lab; and where R&D teams aren't biochemists, but our grandparents.
Back to the Roots makes so many awesome products, I feel like I must have them all. I did however get the chance to try their Mushroom Farm. It's so fun to watch your mushrooms grow from tiny little babies to full sized mushrooms ready to pick and eat.
The first step to getting your Mushroom Farm going is to take it out of the box, using a knife cut a " + " into the bag so that it's able to flap open while growing.

This is such a fun project for you to do with the kids or even on your own if you don't have kids. Everything you need comes in this little kit and it even includes so seeds. I got cherry tomato seeds and planted them right away. I thought it was cool how it had that extra surprise inside.
With your knife you will then kind of scrap a way a little bit of the white top layer that is covering the soil and then place the bag face down into water and let soak for 8 hours.
After the 8 hours soaking in water remove the bag and place it back into the box. Your Mushroom Farm is all ready to grow. You must spray the soil periodically to keep the soil moist. Place your Mushroom Farm near a window but avoid direct light. I had the most success keeping mine on a table in my back yard that was under an overhang. The covered patio was perfect because it

These mushrooms were so delicious. We cooked them up in butter and garlic chunks and ate them just like that. They would be perfect mixed into any dish you and suuuper yummy to have topped on a bacon cheeseburger. The coolest thing about this farm is when you are all done harvesting your first batch you can just turn the box around and repeat all the steps again to begin growing a second farm out of the back. So the fun continues again!!!
